Recipe | Strawberry Vanilla Chia Jam

I’ve been on a bit of a journey with my little one.  A journey to try and sneak in healthy things for her to eat.  Therefore I’ve started making a lot of her snacks from scratch.  There have been some hits, and a decent amount of misses, but here are some that have really been a hit.  Homemade graham crackers and chia jam – a win every time.  I’ve gotten a little crazy experimenting, and trying different flavors and combinations, so we started to develop a stock pile, but since it’s all homemade there are no preservatives and it doesn’t last as long as store bought.  This ties perfectly into another passion of mine – homemade gifts.  And who better to give a homemade gift of love, but your mom on Mother’s Day.  I came up with two combos that I think are perfect for any mom.  First there is the classic PB&J.  I’m sure your mom made you many a PB&J while you were growing up, so why not return the favor with Peanut Butter graham crackers and strawberry vanilla chia jam.  Or you can choose the more “grown up” combination of homemade ginger snaps (with fresh ginger and lemon) and blueberry lemon chia jam.  Both are delicious and perfect for tea and chat with mom, or any time of the day. 


Strawberry Vanilla Chia Jam
2 cups strawberries (fresh or frozen thawed)
2 tablespoons honey (can be more or less depending on sweetness preference)
2 tablespoons chia seeds
Splash of vanilla
Break down the strawberries in a food processor first.  
Over medium heat cook the strawberries and honey until they are heated through and bubbling
Add in the chia seeds and continue to cook until the mixture thickens
Add in the splash of vanilla to preferred taste
Let cool and put in adorable mason jar
Blueberry Lemon Chia Jam
2 cups of blueberries (fresh or frozen thawed)
2 tablespoons honey (can be more or less depending on sweetness preference)
2 tablespoons lemon juice
Zest of one lemon
2 tablespoons of chis seeds
Break down the blueberries in a food processor first.  
Over medium heat cook the blueberries, lemon, zest, and honey until they are heated through and bubbling
Add in the chia seeds and continue to cook until the mixture thickens
Let cool and put in adorable mason jar
