"Black Forest" Brownies for Breakfast

Who wouldn't want to start their day with dessert?!?  Kathleen, our data manager, is determined to keep summer healthy but FUN.

Chickpea chocolate cake

2 C chickpeas

1/3 C of orange juice (I use Trop 50 no pulp)

4 eggs (I use egg whites)

1/3 C stevia (can be tweaked a little for sweetness preference.  The recipe calls for 1 C brown sugar)

¼ C cocoa powder

½ tsp baking powder

¼ tsp baking soda

Optional ¼ to ½ C mini chocolate chips

Preheat oven to 350, oil or Pam 8X8 pan and line with square of parchment paper

In food processor blend chickpeas and OJ until smooth, add eggs and blend again

In another bowl mix stevia (sugar), cocoa, baking powder and baking soda

Add dry ingredient in the food processor and pulse until fully combined.

Pour back in bowl and add in chocolate chips if desired

Bake for 50 mins, and cool on rack for 15 mins before removing from pan

To make it "Black Forest" I added thawed frozen cherries (but the over-achievers can pit those beautiful cherries that are hitting stores) and vanilla greek yogurt on top. Yummy, nutritious, and filling way to start the day.  

Boys Notice | Make Them Happy

we recently had the following comment posted to our FaceBook page...

"I've had this beautiful Hen house linen on my table for a couple of weeks. Love it! Took it off for Tim and Johhny's spaghetti dinner. I'm not the only one who loves it....Johnny- 'Hey! Why did you take that off?! I like it!' So, if you need a spokesperson, Johnny is your Man.😊"

Just when we think they are not looking our teenaged boys let us know the details matter. Something as simple as a cloth napkin or a lovely tablecloth on the table adds a touch of happiness. Make your people happy!

Cucumber Sesame Noodles | Eating Well

Perfect for a summer day!  Many thanks to Kathleen, our data manager, for sharing this recipe with us!

2 cucumbers

2 carrots

2 tbsp rice vinegar

2 tbsp sesame oil

2 tbsp soy sauce (I used low sodium)

Ginger powder to taste

Crushed garlic to taste

Toasted sesame seeds (not necessary to toast them, but I could so I did)

1/2 lb peeled and deveined shrimp sauteed until pink in 1 TBS butter or olive oil with a clove of crushed garlic and pinch of salt

Spiralize the cucumbers, and shred the carrots

Mix all the other ingredients in a small bowl

Pour over the cukes and carrots, and mix well until the noodles are coated.  Top with shrimp.

Can be served right away or chilled in the fridge to let the flavors develop a little more. 

I have also now made these with zucchini noodles instead of cucumbers - equally delicious!

Sacred Spaces | Warm-Up with Hen House Linens

Our National Sales Manager, Christina, recently asked, 

"What if we replace all of the textiles in our house with paper - bedding, curtains, towels, etc - the house would be a cold and uncomfortable place. Yet, this is exactly what we have done to our tables - the most sacred space in our home.  The table is the place where we come to fellowship with the most important people in our lives!  Shouldn't the table be the most warm, inviting, comfortable place in the home?"

The simple addition of cloth table linens can do the trick.  Try it!

Congratulations Graduates | Go forth with good habits

A friend stopped by recently to pick up napkins to give her graduate.  What was most gratifying about this visit was to hear that her daughter had ASKED for Hen House Linens napkins for her new apartment.  This sweet graduate wants a reminder of family meals around the table and she wants a civilized start to her new life.  She has her priorities straight.  I have no doubt her proud mother knows she is on the right path to a successful and happy home.

Momma's Lemonade | Fresh and Refreshing

Just in time for Mother's day.  This easy drink is sure to please.

1.5 ounces of Bourbon (don't waste the top shelf sippin' stuff for this recipe)

1 ounce triple sec

4 ounces lemonade (don't skimp on the lemonade. You need the tart and the sweet to balance the bourbon)

Fresh mint.

Combine liquids and stir well. Pour over a glass of ice. Crush a few leaves of mint between your fingers to release the oil, then add to the glass. Garnish with sprig of mint.

The Mother of All Things

Mother.  We all have one and we are all one.  I know Earth Mama, Hot Mama, the Mother of all headaches, Mother May I, MILF, Mama Pajama, Mom Jean, Yummy Mummy, Mommie Dearest, Mother Goose, Yo Mama, Drama Mama, DogMa and Mamma Mia.  And, not a single one of them has ever given birth.  

To be a mother is to nurture.  It's about planting good seeds and watching a tender young thing grow and blossom and become strong enough to stand on its own, so that it may in turn give.  

To all that have raised up beautiful spirits, animals, gardens, businesses, communities, other people's children, and me... I am humbled by your grace, fortitude, and innate drive to cultivate.  

Word to your Mother.

A Family Can Gather For Breakfast | Egg Cups

Our data manager, Kathleen, has been on a breakfast tear these days.  Her husband Kevin is currently deployed.  Kathleen knows that sitting down as a family to eat a meal is the easiest way to keep her family feeling connected, cared for, and "normal" during their father's absence.  She also fiercely believes a healthy breakfast is the best start to the day.  Sometimes, her busy schedule as a "single Mom" makes sitting down for dinner impossible so she makes sure her family eats breakfast together everyday.  Here's a taste of what Kathleen is putting on her table for breakfast.  I'll keep you posted when she shares more of her creations.

Egg Cups

So easy!  I have them every morning for breakfast, sometimes with fruit, sometimes with breakfast cookies, sometimes solo.

Cheddar Spinach

2 cups frozen spinach thawed

1 C shredded cheddar, or cheese of choice.  I shred my own to avoid the cellulose

Liquid egg whites (can use whole eggs as well).

That’s it! For this version at least.

I thaw the spinach and shred the cheese. Mix them together.  I also add ¼ C nutritional yeast.  Spoon the mixture into silicone muffin cups, and top with egg whites.  Couldn’t be any easier.

Bake is 350 oven for 30ish mins until the egg sets.

I keep mine in a Tupperware in the fridge, and heat 2 in the microwave for 45 seconds in the morning.

Other additions I’ve tried – avocado (YUM!), tomatoes, turkey bacon (another YUM!).  It all depends on what you prefer in your eggs
